Description

A fun twist on taco night, combining juicy chicken and sweet pineapple in one easy-to-make dish.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red onion, sliced
  • 1 bell pepper, sliced (mix of colors preferred)
  • Soft corn or flour tortillas
  • Fresh cilantro, for garnish
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Oil, for cooking


Instructions

  1. In a large skillet, heat oil over medium-high heat and add the chicken. Season with salt and pepper, cooking until browned and cooked through.
  2. Add the red onion and bell peppers, cooking until they start to soften, about 3-4 minutes.
  3. Stir in the pineapple chunks and let them caramelize with the chicken and veggies.
  4. Remove from heat and warm the tortillas in another pan or microwave.
  5. Fill the tortillas with the chicken and pineapple mixture, then garnish with fresh cilantro and a squeeze of lime juice.

Notes

For a low-carb option, consider using lettuce wraps instead of tortillas. Experiment with spices for added flavor!
