Ingredients

- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup pineapple chunks (fresh or canned)
- 1 red onion, sliced
- 1 bell pepper, sliced (mix of colors preferred)
- Soft corn or flour tortillas
- Fresh cilantro, for garnish
- Juice of 1 lime
- Salt and pepper, to taste
- Oil, for cooking
Instructions
- In a large skillet, heat oil over medium-high heat and add the chicken. Season with salt and pepper, cooking until browned and cooked through.
- Add the red onion and bell peppers, cooking until they start to soften, about 3-4 minutes.
- Stir in the pineapple chunks and let them caramelize with the chicken and veggies.
- Remove from heat and warm the tortillas in another pan or microwave.
- Fill the tortillas with the chicken and pineapple mixture, then garnish with fresh cilantro and a squeeze of lime juice.
Notes
For a low-carb option, consider using lettuce wraps instead of tortillas. Experiment with spices for added flavor!
