Ingredients

  • 3 cups old-fashioned oats
  • 1 cup sweetened shredded coconut
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar in a large bowl until light and fluffy.
  3. Beat in the eggs one at a time along with the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually incorporate the dry ingredients into the butter mixture until just combined.
  6. Fold in the oats, shredded coconut, and chocolate chips.
  7. Drop dollops of dough onto a parchment-lined baking sheet, spacing them a few inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown with a soft center.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a dairy-free option, use coconut oil and for a richer flavor, substitute dark chocolate chips.
