Description

Nut & Seed Energy Cookies are wholesome and nutritious, packed with nuts and seeds for a delightful balance of flavor and nutrition.


Ingredients

Scale
  • 2 cups whole oats
  • 1/2 cup nut butter (almond, peanut, or cashew)
  • 1/3 cup honey or maple syrup
  • 1/2 cup chopped nuts (almonds, walnuts, pecans, or hazelnuts)
  • 1/4 cup chia seeds
  • 1/4 cup flaxseed
  • 1 tsp cinnamon
  • 1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, chopped nuts, seeds, cinnamon, and salt.
  3. In a separate bowl, mix the nut butter with honey or maple syrup until smooth and creamy.
  4. Gradually stir the wet ingredients into the dry ingredients until well combined; the mixture should be a bit sticky.
  5. Scoop the dough using a tablespoon and roll into balls. Place on the baking sheet and flatten slightly.
  6. Bake for about 12-15 minutes, or until golden brown.
  7. Let them sit on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Customize the nuts and seeds as per your preference. Store in an airtight container for up to a week.
