Instructions
- In a medium bowl, combine the pumpkin puree, almond butter, and maple syrup. Stir until smooth.
- Sprinkle in the coconut flour and pumpkin spice, mixing until combined and thick.
- Wrap the bowl in plastic wrap and chill in the fridge for 30 minutes.
- Scoop portions of the dough and roll into small balls.
- Melt the dark chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Dip each pumpkin ball into the melted chocolate and place on a parchment-lined tray to set.
Notes
For variety, try rolling the truffles in crushed nuts or coconut instead of chocolate, and adjust sweetness by adding more maple syrup if desired.
