Delightful no-bake vegan pumpkin truffles combining creamy pumpkin puree and rich chocolate, perfect for satisfying a sweet craving.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1/2 cup coconut flour
  • 1 tsp pumpkin spice
  • 1 cup dark chocolate chips


Instructions

  1. In a medium bowl, combine the pumpkin puree, almond butter, and maple syrup. Stir until smooth.
  2. Sprinkle in the coconut flour and pumpkin spice, mixing until combined and thick.
  3. Wrap the bowl in plastic wrap and chill in the fridge for 30 minutes.
  4. Scoop portions of the dough and roll into small balls.
  5. Melt the dark chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  6. Dip each pumpkin ball into the melted chocolate and place on a parchment-lined tray to set.

Notes

For variety, try rolling the truffles in crushed nuts or coconut instead of chocolate, and adjust sweetness by adding more maple syrup if desired.
