Instructions
- In a mixing bowl, combine graham cracker crumbs, cocoa powder, and powdered sugar. Mix well.
- Melt the butter in a saucepan over low heat, then pour it over the dry mixture and stir until combined.
- Stir in the shredded coconut until evenly distributed.
- Line a baking sheet with parchment paper. Shape the mixture into cookie rounds, about two inches across.
- Chill the cookies in the refrigerator for 30 minutes to firm up.
- Meanwhile, melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Drizzle the melted chocolate over each cookie using a fork.
- Return the cookies to the fridge for another 15 minutes to let the chocolate harden.
