- 1 cup heavy whipping cream, chilled
- 1 ½ cups powdered sugar
- 8 oz cream cheese, at room temperature
- 1 tsp vanilla extract
- 1 cup crushed graham crackers
- Optional: 1 cup shredded coconut
Instructions
- In a mixing bowl, blend the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
- Whip the chilled heavy cream in a separate bowl until soft peaks form, then gently fold it into the cream cheese mixture.
- Fold in the crushed pineapple and optional shredded coconut.
- In a small bowl, combine the crushed graham crackers with melted butter, then press the mixture evenly into the bottom of your serving dish.
- Pour the pineapple and cream mixture over the crust and spread it out evenly.
- Refrigerate for at least 4 hours before serving.
