Instructions
- In a large bowl, combine the finely ground pecans and graham cracker crumbs.
- In another bowl, blend together the cream cheese, maple syrup, and vanilla extract until smooth.
- Gradually fold the cream cheese mixture into the pecan mixture until well combined.
- Chill the mixture in the fridge for about 30 minutes to firm up.
- Once chilled, roll the mixture into small balls, about one inch in diameter.
- If desired, roll the balls in additional pecan pieces or chocolate chips.
- Chill the rolled balls in the fridge for another 30 minutes before serving.
