Instructions
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated and hold together when pressed. Spread into the bottom of a 9×13 inch baking dish, pressing firmly.
- In a large bowl, beat cream cheese until smooth and creamy. Gradually add powdered sugar and blend until well combined. Gently fold in whipped topping and vanilla extract.
- Spread the cheesecake layer over the crust smoothly with a spatula.
- Spoon the pie filling over the cheesecake layer, spreading evenly. Optionally, add fresh fruit on top.
- Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
