- 8 oz (225g) Cream Cheese, softened
- 1 cup (120g) Powdered Sugar
- 1 cup (240ml) Heavy Whipping Cream
- 1 cup (240ml) Brewed Coffee, cooled
- 1 ½ cups (150g) Graham Cracker Crumbs
- ½ cup (115g) Unsalted Butter, melted
- 1 tbsp Gelatin
Instructions
- Prepare the Crust: Mix the graham cracker crumbs with melted butter in a bowl, then press firmly into the bottom of a springform pan. Chill.
- Mix the Cheesecake Filling: Beat softened cream cheese with powdered sugar until smooth, then gradually mix in brewed coffee.
- Whip the Cream: In a separate bowl, whip heavy cream until stiff peaks form and gently fold into the cream cheese mixture.
- Add Gelatin: Dissolve gelatin according to packaging instructions and mix into the cheesecake filling.
- Combine Everything: Pour the filling into the chilled crust, smooth the top, cover, and refrigerate for at least 4 hours or overnight.
- Serve: Once set, slice and enjoy with optional toppings like whipped cream or chocolate shavings!
