- 24 Oreo cookies, crushed
- 5 tablespoons unsalted butter, melted
- 1 cup fresh blueberries (or thawed frozen blueberries)
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- A handful of fresh blueberries (for topping)
- Mint leaves (optional, for garnish)
Instructions
- Prepare the crust by crumbling Oreo cookies into fine crumbs. Mix with melted butter and press into a 9-inch springform pan.
- Mash the fresh blueberries in a bowl.
- In a separate bowl, beat cream cheese and powdered sugar until smooth, then add vanilla extract.
- Fold the mashed blueberries into the cream cheese mixture.
- Whip heavy cream into soft peaks and gently fold into the blueberry mixture.
- Pour the filling into the prepared crust and smooth it out.
- Chill in the fridge for at least 4 hours or overnight.
- Once set, remove the springform pan and top with fresh blueberries and mint leaves before serving.
