Description

A delightful blend of creamy blueberry filling and rich Oreo crust, this no-bake torte is perfect for summer gatherings.


Ingredients

  • 24 Oreo cookies, crushed
  • 5 tablespoons unsalted butter, melted
  • 1 cup fresh blueberries (or thawed frozen blueberries)
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • A handful of fresh blueberries (for topping)
  • Mint leaves (optional, for garnish)


Instructions

  1. Prepare the crust by crumbling Oreo cookies into fine crumbs. Mix with melted butter and press into a 9-inch springform pan.
  2. Mash the fresh blueberries in a bowl.
  3. In a separate bowl, beat cream cheese and powdered sugar until smooth, then add vanilla extract.
  4. Fold the mashed blueberries into the cream cheese mixture.
  5. Whip heavy cream into soft peaks and gently fold into the blueberry mixture.
  6. Pour the filling into the prepared crust and smooth it out.
  7. Chill in the fridge for at least 4 hours or overnight.
  8. Once set, remove the springform pan and top with fresh blueberries and mint leaves before serving.

Notes

Customize with different berries or make it vegan with coconut cream and plant-based cream cheese.
