Description

Indulge in these decadent molten chocolate lava cupcakes with a gooey, rich chocolate center.


Ingredients

  • ½ cup unsalted butter
  • 1 cup semi-sweet chocolate, chopped
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 whole eggs
  • 2 egg yolks
  • ¼ cup all-purpose flour
  • 1 teaspoon baking powder


Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a muffin tin with cooking spray or paper liners.
  2. In a heatproof bowl, melt the chocolate and butter together until smooth.
  3. Stir in the powdered sugar until well combined.
  4. Beat in the eggs and egg yolks one at a time, mixing until just incorporated.
  5. Add in the vanilla extract and mix well.
  6. Slowly fold in the flour and baking powder until just combined.
  7. Fill each cupcake liner about 2/3 full and bake for 12-14 minutes.
  8. Cool for a minute, then flip onto a plate and dust with powdered sugar if desired.

Notes

For richer centers, chill the batter for about an hour before baking. Use quality chocolate for the best flavor.
