Description

These adorable Mini Peach Cobblers are delightful, bite-sized desserts filled with sweet, juicy peaches and a buttery, flaky topping.


Ingredients

  • 4-5 medium-sized fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup melted butter


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the sliced peaches with half of the sugar and let them sit for about 15 minutes.
  3. In another bowl, whisk together flour, baking powder, salt, and the remaining sugar.
  4. Add milk to the dry ingredients, stirring until just combined.
  5. Pour in the melted butter and fold it gently into the mixture.
  6. Spoon the peaches into ramekins or a small baking dish.
  7. Carefully scoop the batter over the peaches.
  8. Bake for about 25-30 minutes or until the tops are golden brown and the filling is bubbling.
  9. Let them cool for a few minutes before serving warm with vanilla ice cream or whipped cream.

Notes

Use ripe peaches for the best flavor. You can also substitute with gluten-free flour or use canned peaches if needed.
