Ingredients

- 1/2 cup fresh lemon juice
- 3 large eggs
- 3/4 cup sugar
- 1 cup whole milk (or dairy alternative)
- 1/2 cup melted butter (or coconut oil)
- 1 cup self-raising flour (or all-purpose flour with baking powder)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin with non-stick spray or butter.
- In a blender, combine lemon juice, eggs, sugar, milk, melted butter, and self-raising flour. Blend until smooth and creamy.
- Pour the blended mixture into each muffin cup, filling them about ¾ full.
- Bake for 20-25 minutes, until lightly golden on top.
- Allow to cool in the tin for a few minutes before transferring to a wire rack.
Notes
Chill before serving for enhanced flavor. Try serving with whipped cream or vanilla ice cream.
