Description

A luxurious yet simple dish of pillowy gnocchi in a creamy sauce with garlic, parmesan, and fresh spinach.


Ingredients

Scale
  • 1 lb gnocchi
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 cups fresh spinach
  • Salt and pepper to taste


Instructions

  1. Boil a big pot of salted water, then add the gnocchi and cook until they float to the surface, about 3-5 minutes.
  2. Meanwhile, melt butter in a pan over medium heat; add minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in the heavy cream and bring to a gentle simmer; add parmesan cheese and stir until melted and combined.
  4. Toss in fresh spinach and let it wilt in the sauce, about 2 minutes.
  5. Drain the cooked gnocchi and gently fold it into the creamy sauce until well coated.
  6. Season with salt and pepper to taste, and serve with extra parmesan on the side.

Notes

For a lighter version, substitute light cream for heavy cream. Fresh herbs can also be used as a garnish.
