A luxurious yet simple dish of pillowy gnocchi in a creamy sauce with garlic, parmesan, and fresh spinach.

- 1 lb gnocchi
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Boil a big pot of salted water, then add the gnocchi and cook until they float to the surface, about 3-5 minutes.
- Meanwhile, melt butter in a pan over medium heat; add minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and bring to a gentle simmer; add parmesan cheese and stir until melted and combined.
- Toss in fresh spinach and let it wilt in the sauce, about 2 minutes.
- Drain the cooked gnocchi and gently fold it into the creamy sauce until well coated.
- Season with salt and pepper to taste, and serve with extra parmesan on the side.
Notes
For a lighter version, substitute light cream for heavy cream. Fresh herbs can also be used as a garnish.
