Ingredients
Scale
- 4 cups corn (fresh or frozen)
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or Greek yogurt
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/2 cup cilantro, chopped (optional)
- 1 teaspoon chili powder (adjust to taste)
- Juice of 1 lime
- 1/2 cup cotija or feta cheese, crumbled

Instructions
- In a large pot, heat a little oil over medium heat. Add diced onions and cook until softened. Toss in minced garlic and stir until fragrant.
- Stir in the corn and keep cooking for a few more minutes.
- Add broth to the pot and bring to a gentle simmer. Cook for about 15 minutes.
- Use an immersion blender to puree the soup, or carefully transfer to a blender in batches.
- Mix in the heavy cream and a splash of lime juice. Adjust seasoning with salt, pepper, and chili powder.
- Ladle soup into bowls and top with crumbled cheese, diced avocado, lime wedges, and cilantro if desired.
Notes
For extra texture, save a bit of corn to add whole just before serving. Use fresh corn when in season for the best flavor.
