Delightful Maple Walnut Bars that combine chewy and crispy textures with the rich sweetness of maple and the crunch of walnuts.
Ingredients

- 1 cup rolled oats
- 1 cup all-purpose flour (or whole wheat)
- ½ cup brown sugar
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup maple syrup
- ½ cup melted coconut oil (or unsalted butter)
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts (optional)
- 1 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, salt, and cinnamon (if using).
- Pour in the maple syrup, melted coconut oil, and vanilla extract, and blend until just moistened.
- Gently fold in the chopped walnuts.
- Spread the mixture evenly in the prepared baking dish and press it down gently.
- Bake for 25-30 minutes until edges are golden and a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes, then lift out using parchment paper and cool completely on a wire rack before slicing.
Notes
These bars can be served warm or at room temperature, paired with ice cream or fresh fruit.
