- 2 Chicken Breasts, diced
- 2 cups Fresh Spinach
- 1 cup Mushrooms, chopped (cremini preferred)
- 4 oz Cream Cheese
- 2 cloves Garlic, minced
- 1 cup Mozzarella Cheese, shredded
- 1 tbsp Olive Oil
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until no longer pink. Set aside.
- In the same skillet, add garlic and mushrooms. Sauté until softened, then add spinach and cook until wilted.
- Stir in cream cheese until melted and well combined.
- In a large baking dish, combine chicken with the creamy spinach and mushroom mixture.
- Sprinkle mozzarella cheese on top and bake for 20-25 minutes until cheese is bubbly and golden.
- Let cool slightly before serving.
Notes
For juicier bites, consider using chicken thighs. You can also mix in other veggies for added texture.
