Description

A creamy, savory casserole of tender chicken, fresh spinach, and earthy mushrooms, low in carbs but high in flavor.


Ingredients

Scale
  • 2 Chicken Breasts, diced
  • 2 cups Fresh Spinach
  • 1 cup Mushrooms, chopped (cremini preferred)
  • 4 oz Cream Cheese
  • 2 cloves Garlic, minced
  • 1 cup Mozzarella Cheese, shredded
  • 1 tbsp Olive Oil
  • Salt and pepper, to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until no longer pink. Set aside.
  3. In the same skillet, add garlic and mushrooms. Sauté until softened, then add spinach and cook until wilted.
  4. Stir in cream cheese until melted and well combined.
  5. In a large baking dish, combine chicken with the creamy spinach and mushroom mixture.
  6. Sprinkle mozzarella cheese on top and bake for 20-25 minutes until cheese is bubbly and golden.
  7. Let cool slightly before serving.

Notes

For juicier bites, consider using chicken thighs. You can also mix in other veggies for added texture.
