- 1/2 cup Unsalted Butter
- 1 cup Granulated Sugar
- 3 large Eggs
- 1/4 cup Fresh Lime Juice
- 1 cup Coconut Milk
- 1 cup Shredded Coconut
- 2 cups Powdered Sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
- Whisk together flour, baking powder, and salt in a mixing bowl.
- Cream the butter and granulated sugar together until light and fluffy.
- Add eggs one at a time, mixing well, then stir in lime juice.
- Gradually add dry ingredients and coconut milk, folding in the shredded coconut.
- Divide batter between prepared pans and bake for 25-30 minutes.
- Cool in pans for 10 minutes, then transfer to wire racks. Frost with a mixture of powdered sugar, butter, and lime juice.
Notes
For a dairy-free version, substitute the butter with coconut oil and use non-dairy milk. Store leftovers in an airtight container in the refrigerator.
