Description

A tropical delight with zesty lime and creamy coconut, this cake is perfect for any occasion.


Ingredients

  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 3 large Eggs
  • 1/4 cup Fresh Lime Juice
  • 1 cup Coconut Milk
  • 1 cup Shredded Coconut
  • 2 cups Powdered Sugar (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. Whisk together flour, baking powder, and salt in a mixing bowl.
  3. Cream the butter and granulated sugar together until light and fluffy.
  4. Add eggs one at a time, mixing well, then stir in lime juice.
  5. Gradually add dry ingredients and coconut milk, folding in the shredded coconut.
  6. Divide batter between prepared pans and bake for 25-30 minutes.
  7. Cool in pans for 10 minutes, then transfer to wire racks. Frost with a mixture of powdered sugar, butter, and lime juice.

Notes

For a dairy-free version, substitute the butter with coconut oil and use non-dairy milk. Store leftovers in an airtight container in the refrigerator.
