Description

Delightful dessert bars combining sweet raspberries and tangy lemon in a buttery crumble.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1/2 cup lemon juice (freshly squeezed)
  • 2 tablespoons lemon zest
  • 2 cups raspberries (fresh or frozen)
  • 1 teaspoon baking powder
  • A pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, sugar, and melted butter until crumbly. Press this mixture into the bottom of a greased baking dish.
  3. Bake the crust for about 15 minutes or until it’s just lightly golden. Take it out and let it cool.
  4. In another bowl, whisk together the eggs, sugar, lemon juice, zest, and a pinch of salt until smooth. Gently stir in the raspberries.
  5. Pour the lemon mixture over the cooled crust evenly.
  6. Combine the leftover crust mixture with a bit more butter until crumbly, then sprinkle it over the filling.
  7. Return to the oven for about 25-30 minutes or until the top is golden and set.
  8. Allow the bars to cool completely before cutting them into squares.

Notes

Serve warm or chilled; great with vanilla ice cream or whipped cream on top.
