Delightful dessert bars combining sweet raspberries and tangy lemon in a buttery crumble.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1/2 cup lemon juice (freshly squeezed)
- 2 tablespoons lemon zest
- 2 cups raspberries (fresh or frozen)
- 1 teaspoon baking powder
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, sugar, and melted butter until crumbly. Press this mixture into the bottom of a greased baking dish.
- Bake the crust for about 15 minutes or until it’s just lightly golden. Take it out and let it cool.
- In another bowl, whisk together the eggs, sugar, lemon juice, zest, and a pinch of salt until smooth. Gently stir in the raspberries.
- Pour the lemon mixture over the cooled crust evenly.
- Combine the leftover crust mixture with a bit more butter until crumbly, then sprinkle it over the filling.
- Return to the oven for about 25-30 minutes or until the top is golden and set.
- Allow the bars to cool completely before cutting them into squares.
Notes
Serve warm or chilled; great with vanilla ice cream or whipped cream on top.
