Description

A classic dessert featuring a zesty lemon filling, a flaky crust, and a cloud-like layer of fluffy meringue.


Ingredients

  • 1 Pie Crust (homemade or store-bought)
  • 1 cup Granulated Sugar
  • 1/2 cup Lemon Juice (freshly squeezed)
  • 4 Egg Yolks
  • 2 tbsp Butter
  • 3 tbsp Cornstarch
  • 4 Egg Whites
  • 1 tsp Vanilla Extract


Instructions

  1. Preheat the oven and prepare pie crust in a pie dish, then pre-bake until lightly golden.
  2. In a saucepan, combine sugar, cornstarch, and salt. Gradually whisk in water and lemon juice, heating until thickened. Remove and whisk in egg yolks and butter.
  3. Pour the lemon filling into the pre-baked pie crust.
  4. Beat egg whites until soft peaks form, add sugar gradually until stiff peaks form, then fold in vanilla.
  5. Spread meringue over the filling, sealing edges well.
  6. Bake in the oven until meringue is golden brown.
  7. Cool at room temperature before slicing.

Notes

For a gluten-free option, use a gluten-free pie crust. Ensure meringue touches the crust to prevent weeping.
