- 1/2 cup Lemon Juice (freshly squeezed)
- 4 Egg Yolks
- 2 tbsp Butter
- 3 tbsp Cornstarch

- 1 tsp Vanilla Extract
Instructions
- Preheat the oven and prepare pie crust in a pie dish, then pre-bake until lightly golden.
- In a saucepan, combine sugar, cornstarch, and salt. Gradually whisk in water and lemon juice, heating until thickened. Remove and whisk in egg yolks and butter.
- Pour the lemon filling into the pre-baked pie crust.
- Beat egg whites until soft peaks form, add sugar gradually until stiff peaks form, then fold in vanilla.
- Spread meringue over the filling, sealing edges well.
- Bake in the oven until meringue is golden brown.
- Cool at room temperature before slicing.

For a gluten-free option, use a gluten-free pie crust. Ensure meringue touches the crust to prevent weeping.
