Description

Delightful Lemon Macarons with a zesty flavor and airy texture that brighten up any occasion.


Ingredients

  • 1 cup almond flour
  • 1 3/4 cups confectioners’ sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • 1/2 cup unsalted butter (softened)
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift together the almond flour and confectioners’ sugar into a bowl.
  3. In a separate bowl, whip the egg whites until foamy, then slowly add granulated sugar and whip until stiff peaks form.
  4. Gently fold the dry mixture into the whipped egg whites.
  5. Add lemon zest and juice, folding gently until mixed.
  6. Transfer batter to a piping bag and pipe small circles onto baking sheets.
  7. Tap the baking sheets on the counter to release air bubbles.
  8. Let them sit for about 30 minutes to form a skin.
  9. Bake for 15-20 minutes until they form little feet.
  10. Let them cool completely before removing from parchment.
  11. For filling, beat butter, lemon juice, and zest with confectioners’ sugar until light and fluffy.
  12. Pair macarons and pipe filling onto half, then sandwich them together.
