- 3 large egg whites

Instructions
- Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
- Sift together the almond flour and confectioners’ sugar into a bowl.
- In a separate bowl, whip the egg whites until foamy, then slowly add granulated sugar and whip until stiff peaks form.
- Gently fold the dry mixture into the whipped egg whites.
- Add lemon zest and juice, folding gently until mixed.
- Transfer batter to a piping bag and pipe small circles onto baking sheets.
- Tap the baking sheets on the counter to release air bubbles.
- Let them sit for about 30 minutes to form a skin.
- Bake for 15-20 minutes until they form little feet.
- Let them cool completely before removing from parchment.
- For filling, beat butter, lemon juice, and zest with confectioners’ sugar until light and fluffy.
- Pair macarons and pipe filling onto half, then sandwich them together.
