Description

A refreshing and nourishing dish made with fluffy quinoa, hearty chickpeas, and fresh herbs, all tossed together with a zesty lemon dressing.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup fresh herbs (parsley, cilantro, or mint)
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste


Instructions

  1. Rinse quinoa under cold water, then combine it with water in a saucepan. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes or until fluffy.
  2. If using canned chickpeas, drain and rinse them. If using dried chickpeas, soak overnight and cook until tender.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  4. In a large bowl, mix cooked quinoa, chickpeas, and fresh herbs. Pour the dressing over the top and toss until well combined.
  5. Taste and adjust seasonings with more lemon juice, salt, or herbs as desired.

Notes

Rinse quinoa before cooking to remove bitterness. This dish stores well in the refrigerator for up to four days, making it perfect for meal prep.
