- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar

- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 2 large eggs
- 1 cup granulated sugar (for filling)
- 1/2 cup fresh lemon juice
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking dish with butter or line it with parchment paper.
- In a bowl, mix together 1 cup of flour, 1/2 cup of granulated sugar, and 1/2 cup of melted butter until crumbly. Press the mixture evenly into your prepared pan.
- Bake for about 15 minutes or until lightly golden.
- In another bowl, whisk together 2 eggs, 1 cup of granulated sugar, 1/4 cup of flour, 1/4 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/2 cup of fresh lemon juice until smooth.
- Pour the lemon filling over the baked crust.
- Return the pan to the oven and bake for an additional 20-25 minutes until set, keeping the center slightly gooey.
- Let it cool before dusting the top with powdered sugar.
- Slice into squares and enjoy!
Notes
For a gluten-free version, substitute the all-purpose flour with a gluten-free blend. These bars store well in the fridge for up to a week.
