Description

A delightful dessert that combines a buttery crust with a luscious lemon filling, perfect for any gathering.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour (for filling)
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/2 cup fresh lemon juice
  • Powdered sugar (for dusting)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish with butter or line it with parchment paper.
  3. In a bowl, mix together 1 cup of flour, 1/2 cup of granulated sugar, and 1/2 cup of melted butter until crumbly. Press the mixture evenly into your prepared pan.
  4. Bake for about 15 minutes or until lightly golden.
  5. In another bowl, whisk together 2 eggs, 1 cup of granulated sugar, 1/4 cup of flour, 1/4 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/2 cup of fresh lemon juice until smooth.
  6. Pour the lemon filling over the baked crust.
  7. Return the pan to the oven and bake for an additional 20-25 minutes until set, keeping the center slightly gooey.
  8. Let it cool before dusting the top with powdered sugar.
  9. Slice into squares and enjoy!

Notes

For a gluten-free version, substitute the all-purpose flour with a gluten-free blend. These bars store well in the fridge for up to a week.
