Ingredients

  • 1/2 cup Butter

  • 4 Eggs
  • 1/4 cup Lemon Juice
  • 1/2 cup Powdered Sugar
  • 1 cup Heavy Cream


Instructions

  1. Prepare the Choux Pastry: In a saucepan, combine butter and water, bringing it to a boil. Add flour and stir until the mixture pulls away from the sides. Let it cool, then mix in the eggs one at a time until smooth.
  2. Pipe the Pastry: Transfer the dough to a piping bag and pipe small mounds onto a baking sheet lined with parchment paper.
  3. Bake: Place them in a preheated oven at 400°F (200°C) for 20-25 minutes until golden brown and puffed up.
  4. Make the Lemon Cream: Whip the heavy cream until soft peaks form, then fold in powdered sugar and lemon juice. Adjust sweetness to taste.
  5. Fill the Puffs: Once cool, use a small knife to create a hole at the bottom and fill with lemon cream using a piping bag.
  6. Dust and Serve: Dust with powdered sugar before serving for added sweetness.

Notes

Use room temperature eggs for better incorporation. Let the choux pastry cool before filling to prevent melting the cream.
