- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- ½ cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- ¼ cup lemon juice, freshly squeezed
- 1 tablespoon lemon zest
- 1 large egg
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine flour, granulated sugar, and softened butter until crumbly. Press the mixture into the bottom of a greased 9×9-inch baking pan.
- Bake the crust for 10-12 minutes until lightly golden.
- In another bowl, beat the cream cheese until smooth. Add powdered sugar, lemon juice, lemon zest, and egg. Mix until creamy and well-combined.
- Spread the filling over the cooled crust and bake for another 20-25 minutes until set with a slight jiggle.
- Let cool, refrigerate for at least two hours, then cut into squares and dust with powdered sugar before serving.
Notes
Serve with whipped cream or vanilla ice cream for an extra treat. Fresh berries or mint can enhance the presentation.
