Description

Ingredients

  • 1 cup sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish or line with parchment paper.
  2. Melt the butter in a microwave-safe bowl, being careful not to overheat it.
  3. In a large mixing bowl, combine melted butter and sugar. Stir well, then add eggs one at a time, mixing after each addition.
  4. Mix in the fresh lemon juice and zest.
  5. In a separate bowl, whisk together flour and baking powder. Gradually add this mixture to the wet ingredients, stirring gently until just combined.
  6. Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes or until a toothpick comes out clean with a few moist crumbs.
  7. Allow the brownies to cool completely, then drizzle with a glaze made from powdered sugar and lemon juice.
  8. Cut into squares and serve.

Notes

For a gluten-free option, substitute all-purpose flour with almond flour or a gluten-free blend. Serve with vanilla ice cream for an extra treat.
