Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the diced onions and bell peppers in olive oil until soft and fragrant.
- In a bowl, mix the cooked protein, sautéed veggies, and enchilada sauce.
- Spread a thin layer of enchilada sauce in a baking dish. Layer tortillas, filling mixture, and cheese, repeating layers until ingredients are used. Top with more sauce and cheese.
