A comforting and delicious one-pot meal featuring tender chicken, fluffy rice, and a creamy sauce, all baked to perfection.
Ingredients

- 2 cups boneless, skinless chicken breasts or thighs
- 1 cup long-grain white rice
- 1 can cream of chicken soup
- 2 cups chicken broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups mixed vegetables (fresh or frozen)
- 1 cup shredded cheddar cheese
- Salt, pepper, and seasonings (thyme, parsley) to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine chicken, rice, cream of chicken soup, chicken broth, onion, garlic, mixed vegetables, half the cheese, and seasonings. Stir until well mixed.
- Pour the mixture into a greased 9×13 inch baking dish.
- Sprinkle the remaining cheese over the top.
- Cover with aluminum foil and bake for about 45 minutes.
- After 45 minutes, remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
- Let sit for a few minutes before serving.
Notes
Substitutions include using leftover rotisserie chicken for faster prep. Can be made with brown rice; just adjust liquid and cooking time. Leftovers store well in the fridge for up to 3 days.
