- 1 lb Ground Beef or Sausage (or turkey/plant-based substitute)
- 1 Onion, chopped
- 3-4 cloves Garlic, minced
- 1 Bell Pepper, diced (optional)
- 28 oz Crushed Tomatoes
- 4 cups Chicken or Vegetable Broth
- 8 oz Lasagna Noodles, broken into pieces
- 1 tbsp Italian Seasoning
- 1 cup Ricotta Cheese
- 1 cup Mozzarella Cheese, shredded
- Olive oil, for sautéing
Instructions
- In a large pot, heat some olive oil over medium heat. Add the chopped onion and cook until soft and translucent. Toss in the garlic and cook for about a minute.
- Add the ground beef or sausage (or your chosen substitute) and cook until browned. Drain any excess fat.
- Stir in the bell peppers and crushed tomatoes, mixing everything together.
- Add the broth and bring the mixture to a gentle simmer.
- Incorporate the broken lasagna noodles and Italian seasoning. Stir occasionally and let it simmer until the noodles are al dente.
- Once the noodles are cooked, turn off the heat and stir in the ricotta. Serve hot, topped with shredded mozzarella cheese.
Notes
For an extra cozy touch, serve with crusty garlic bread or a fresh salad. Great topped with fresh basil or parsley.
