Delicious, deconstructed Lamb Gyro Bowls featuring tender lamb, fresh veggies, and a creamy sauce for a satisfying meal.
Ingredients

- 1 lb ground lamb
- 3 cloves garlic, minced
- 1 sweet onion, diced
- 1 tsp oregano
- 1 tsp cumin
- 1 tsp paprika
- 1 cup Greek yogurt
- 1 cucumber, diced
- 1 tomato, diced
- 1 bell pepper, diced
- 2 tbsp lemon juice
- Fresh parsley or mint, chopped
Instructions
- In a skillet, brown the ground lamb over medium heat. Add minced garlic and diced onion, cooking until soft.
- Sprinkle in the oregano, cumin, and paprika, and stir together. Cook for a few more minutes until fragrant, tasting and adjusting as needed.
- In a bowl, combine Greek yogurt, lemon juice, and a pinch of salt. Stir in chopped fresh herbs.
- Dices cucumber, tomato, and bell pepper, and arrange them beautifully in bowls.
- Assemble the bowls: start with lamb as the base, layer on veggies, and drizzle the creamy sauce on top. Garnish with additional fresh herbs if desired.
