Description

Delicious fluffy muffins packed with juicy peaches and drizzled with sweet caramel, perfect for brunch or as a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup melted butter
  • 2 large eggs
  • 2 cups chopped peaches
  • 1/2 cup caramel sauce


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners or spray it with non-stick spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix together the buttermilk, melted butter, and eggs until well combined.
  4. Gradually add the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Fold in the chopped peaches carefully to avoid breaking them apart.
  6. Spoon the batter into the prepared muffin tins, filling each about 3/4 full.
  7. Drizzle caramel sauce on top of each muffin.
  8. Bake for 18-22 minutes or until a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For a deeper flavor, you can substitute granulated sugar with coconut sugar. Experiment with other fruits like blueberries or cherries.
