- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1/2 cup melted butter
- 2 large eggs
- 2 cups chopped peaches
- 1/2 cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners or spray it with non-stick spray.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix together the buttermilk, melted butter, and eggs until well combined.
- Gradually add the wet ingredients into the dry ingredients, stirring gently until just combined.
- Fold in the chopped peaches carefully to avoid breaking them apart.
- Spoon the batter into the prepared muffin tins, filling each about 3/4 full.
- Drizzle caramel sauce on top of each muffin.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For a deeper flavor, you can substitute granulated sugar with coconut sugar. Experiment with other fruits like blueberries or cherries.
