- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and diced
- ¼ cup granulated sugar
- ¼ teaspoon salt
- 2-3 tablespoons ice water
- 1 cup heavy whipping cream
- ½ cup mascarpone cheese
- ¼ cup powdered sugar
- Zest of 1 lemon
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
- Optional: fresh mint leaves or a dusting of powdered sugar for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, sugar, and salt. Add the cold, diced butter and mix until crumbly.
- Gradually add ice water until the dough holds together.
- Press the dough into a tart pan, pricking the bottom with a fork. Bake for about 20 minutes until lightly golden.
- While the crust cools, whip the heavy cream to soft peaks. Fold in mascarpone, powdered sugar, lemon zest, and vanilla until smooth.
- Spread the cream filling onto the cooled tart shell and arrange the sliced strawberries on top.
- Optionally, add fresh mint leaves for garnish.
Notes
Best enjoyed the day it’s made. If needed, leftovers can be refrigerated for 2-3 days.
