Description

Delightful cherry cookies with a tender texture, coated in powdered sugar, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup powdered sugar (plus extra for rolling)
  • 2 cups all-purpose flour (or almond flour for gluten-free)
  • 1 cup chopped cherries (fresh or frozen, pitted)
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 1/2 cup chopped nuts (optional, such as walnuts or pecans)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter and powdered sugar in a mixing bowl until light and fluffy, about 3-4 minutes.
  3. Mix in the vanilla extract and a pinch of salt.
  4. Combine the all-purpose flour and chopped cherries in a separate bowl.
  5. Gradually add the flour-cherry mixture to the butter mixture and stir until just combined.
  6. Fold in nuts gently if using.
  7. Scoop out small portions of dough and roll them into 1-inch balls.
  8. Place on a lined baking sheet, giving space in between.
  9. Bake for 12-15 minutes, until the edges are golden.
  10. Cool slightly and roll in powdered sugar before serving.

Notes

Make sure your butter is at room temperature for better mixing. If using frozen cherries, thaw and drain them well.
