- 1 cup unsalted butter, room temperature
- 1 cup powdered sugar (plus extra for rolling)
- 2 cups all-purpose flour (or almond flour for gluten-free)
- 1 cup chopped cherries (fresh or frozen, pitted)
- 1 teaspoon vanilla extract
- A pinch of salt
- 1/2 cup chopped nuts (optional, such as walnuts or pecans)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter and powdered sugar in a mixing bowl until light and fluffy, about 3-4 minutes.
- Mix in the vanilla extract and a pinch of salt.
- Combine the all-purpose flour and chopped cherries in a separate bowl.
- Gradually add the flour-cherry mixture to the butter mixture and stir until just combined.
- Fold in nuts gently if using.
- Scoop out small portions of dough and roll them into 1-inch balls.
- Place on a lined baking sheet, giving space in between.
- Bake for 12-15 minutes, until the edges are golden.
- Cool slightly and roll in powdered sugar before serving.
Notes
Make sure your butter is at room temperature for better mixing. If using frozen cherries, thaw and drain them well.
