- ΒΌ cup Honey
- 2 tablespoons Lime Juice
- 1 Avocado
- 2 cups White Rice, cooked
- Salt and Pepper to taste
Instructions
- In a bowl, mix honey, lime juice, salt, and pepper. Add the chicken and marinate in the fridge for at least 30 minutes.
- Cook your rice according to package directions, then fluff it up with a fork.
- Preheat your grill or skillet over medium-high heat and cook the chicken for 6-7 minutes per side until cooked through.
- Let the chicken rest, then slice the avocado into halves and scoop out the pieces.
- Assemble the stack by layering rice, sliced chicken, and avocado. Drizzle with any leftover honey lime sauce.
Notes
Marinating the chicken longer can intensify flavors, and rotisserie chicken can be used for a quicker option.
