Ingredients

  • 1/2 cup honey (or maple syrup)
  • 1 can (15 oz) creamed corn
  • 2 eggs (beaten)
  • 1/4 cup melted butter (or coconut oil)
  • 1 cup cornmeal (or almond flour for gluten-free)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp pepper


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the creamed corn, sweet corn, honey, and melted butter.
  3. Add the beaten eggs and mix well.
  4. In another bowl, combine cornmeal, baking powder, salt, and pepper.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until blended.
  6. Lightly grease a 9×13-inch baking dish.
  7. Pour the mixture into the prepared dish, spreading it out evenly.
  8. Bake for about 45-50 minutes until golden on top and set in the center.
  9. Let it cool for a few minutes before serving.
