- 1 ½ cups all-purpose flour
- ½ cup rolled oats
- ½ cup packed brown sugar
- ½ cup granulated sugar
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 1 cup unsalted butter, melted
- 3 medium apples (Granny Smith or Honeycrisp)
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, rolled oats, both sugars, cinnamon, and salt.
- Add melted butter and mix until it resembles coarse crumbs.
- Reserve 1 cup of the mixture for topping and press the remainder into the bottom of a greased 9×9-inch baking pan.
- Peel, core, and thinly slice the apples and toss with granulated sugar, vanilla, cinnamon, and lemon juice.
- Spread the apple mixture over the crust.
- Sprinkle the reserved crumb topping over the apples.
- Bake for 30-35 minutes or until the top is golden brown and the apples are bubbly.
- Let cool for 15-20 minutes before cutting into squares.
Notes
Feel free to substitute butter with coconut oil or plant-based butter for a vegan option. Add nuts or caramel bits for extra flavor!
