Description

Creamy, comforting homemade rice pudding infused with vanilla, cinnamon, and nutmeg. Enjoy it warm or chilled!


Ingredients

Scale
  • 1 cup short-grain rice
  • 2 cups water
  • 3 cups whole milk
  • ¾ cup granulated sugar
  • 2 eggs
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • A pinch of nutmeg
  • 1 tablespoon butter (optional)


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine rinsed rice with water, bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until tender.
  3. Stir in milk and sugar, simmer on low for 20-30 minutes, stirring occasionally.
  4. In a separate bowl, whisk eggs and temper with some warm rice mixture, then pour back into the pot.
  5. Add vanilla, cinnamon, and nutmeg, mix well and cook for another 5 minutes.
  6. If desired, stir in raisins, nuts, or butter before serving warm or chilled.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Serve warm with a sprinkle of cinnamon or chilled with fruits.
