Description
Creamy, comforting homemade rice pudding infused with vanilla, cinnamon, and nutmeg. Enjoy it warm or chilled!
Ingredients

- 1 cup short-grain rice
- 2 cups water
- 3 cups whole milk
- ¾ cup granulated sugar
- 2 eggs
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon
- A pinch of nutmeg
- 1 tablespoon butter (optional)
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, combine rinsed rice with water, bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until tender.
- Stir in milk and sugar, simmer on low for 20-30 minutes, stirring occasionally.
- In a separate bowl, whisk eggs and temper with some warm rice mixture, then pour back into the pot.
- Add vanilla, cinnamon, and nutmeg, mix well and cook for another 5 minutes.
- If desired, stir in raisins, nuts, or butter before serving warm or chilled.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Serve warm with a sprinkle of cinnamon or chilled with fruits.
