- 2 cups water
- 3 cups whole milk (or milk alternative)
- 3/4 cup granulated sugar (or brown sugar)
- 2 eggs (optional)
- 1 tablespoon butter (optional)
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of nutmeg
- Raisins or chopped nuts (optional, for garnish)
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce to low heat, cover, and let it simmer for about 15 minutes.
- Stir in the milk and sugar, and let this simmer for another 20-30 minutes, stirring occasionally.
- If using eggs, whisk them in a separate bowl, then temper them with a bit of the warm rice mixture before returning to the pot.
- Add vanilla, cinnamon, and nutmeg; cook for another 5 minutes to let flavors meld.
- Stir in optional extras like raisins or nuts and the butter if using. Allow to cool slightly before serving.
Notes
Serve warm or chilled, topped with cinnamon, raisins, whipped cream, or a drizzle of maple syrup for an indulgent treat.
