- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped

- 1 cup milk (or non-dairy milk)
- Salt and pepper to taste
Instructions
- In a large pot, combine the chicken and chicken broth. Bring it to a gentle boil, then reduce to a simmer.
- Add the chopped onions, carrots, and celery. Let them simmer together for about 10-15 minutes until softened.
- In a bowl, mix the flour, baking powder, salt, and pepper. Stir in the milk until it forms a dough.
- Shred the chicken while it’s still in the pot. Then, drop spoonfuls of the dumpling dough on top of the bubbling broth.
- Cover the pot and let it cook for about 15 minutes, allowing the dumplings to rise and cook through.
- Taste the broth and adjust with more salt, pepper, or herbs as needed. Serve hot in bowls, optionally garnished with fresh parsley.
Notes
For a richer flavor, opt for bone-in chicken; just remember to remove the bones before serving. Let the dumpling dough rest before dropping it in for fluffier results.
