Ingredients

  • 2 cups boneless, skinless chicken thighs or breasts
  • 4 cups chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 cups all-purpose flour (or gluten-free flour)
  • 1 tablespoon baking powder
  • 1 cup milk (or non-dairy milk)
  • Salt and pepper to taste


Instructions

  1. In a large pot, combine the chicken and chicken broth. Bring it to a gentle boil, then reduce to a simmer.
  2. Add the chopped onions, carrots, and celery. Let them simmer together for about 10-15 minutes until softened.
  3. In a bowl, mix the flour, baking powder, salt, and pepper. Stir in the milk until it forms a dough.
  4. Shred the chicken while it’s still in the pot. Then, drop spoonfuls of the dumpling dough on top of the bubbling broth.
  5. Cover the pot and let it cook for about 15 minutes, allowing the dumplings to rise and cook through.
  6. Taste the broth and adjust with more salt, pepper, or herbs as needed. Serve hot in bowls, optionally garnished with fresh parsley.

Notes

For a richer flavor, opt for bone-in chicken; just remember to remove the bones before serving. Let the dumpling dough rest before dropping it in for fluffier results.
