- 2 cups Whole Wheat Flour
- 2 teaspoons Baking Powder
- 1 cup Greek Yogurt
- 1 large Egg
- 1 cup Mozzarella Cheese, Shredded
- A handful of Turkey Pepperoni slices
- 1 Red Bell Pepper, Chopped
- Dried Italian Herbs (oregano and basil) – to taste
- Salt and Pepper – to taste
- Olive Oil – for brushing
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the whole wheat flour, baking powder, and salt. Stir until well mixed.
- Incorporate the Greek yogurt and the egg into your dry mix. Stir until a dough forms.
- Lightly flour your hands and knead the dough for about 1-2 minutes until smooth.
- Roll the dough into a rectangle about ¼ inch thick.
- Cut out shapes from the dough. Fill each piece with a tablespoon of mozzarella, a few slices of turkey pepperoni, and chopped bell peppers.
- Fold the dough over the fillings and crimp the edges.
- Place the pockets on a parchment-lined baking sheet. Brush with olive oil and sprinkle with dried herbs.
- Bake for about 20-25 minutes, or until golden brown.
- Let cool for a few minutes before serving.
