High Protein Honey BBQ Chicken with Crispy Potatoes

Description

A delicious and satisfying high protein meal featuring juicy chicken breast coated in honey BBQ sauce, served alongside golden crispy potatoes.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1/4 cup honey
  • 1/2 cup barbecue sauce
  • 4 medium Yukon Gold potatoes, washed and chopped into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the potatoes by washing and chopping them into even 1-inch cubes.
  3. In a large bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika until well coated.
  4. Spread the potatoes on a baking sheet and bake for 25-30 minutes, flipping halfway, until crisp and golden.
  5. While the potatoes are roasting, mix honey and barbecue sauce in a bowl and coat the chicken breasts.
  6. Let the chicken marinate for at least 15 minutes.
  7. Cook the chicken in a grill pan over medium heat for 6-7 minutes on each side until cooked through, or bake in the oven for about 20 minutes alongside the potatoes.
  8. Serve the chicken on a plate with crispy potatoes and drizzle some extra honey BBQ sauce on top.

Notes

For crispier potatoes, soak them in water for 30 minutes before seasoning. Use a meat thermometer to check for doneness at 165°F (75°C).
