Description

A delicious, healthy meal featuring tender chicken in a creamy Cajun sauce served with fluffy rice and bell peppers.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 4 oz cream cheese
  • 2 tbsp Cajun seasoning
  • 1 cup chicken broth
  • 1 cup jasmine rice
  • 1 bell pepper, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with Cajun seasoning and cook for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest.
  2. In the same skillet, sauté diced onion and sliced bell peppers for 3-4 minutes until tender.
  3. Add minced garlic and cook for 1 minute. Mix in cream cheese, chicken broth, and more Cajun seasoning until smooth.
  4. Chop rested chicken, return to skillet, and add cooked rice. Mix gently and heat for another 2-3 minutes.
  5. Serve in bowls and garnish with fresh herbs if desired.

Notes

Adjust Cajun seasoning to your spice preference. Leftovers can be stored in the fridge for up to 3 days.
