- 3 cloves garlic, minced
- 2 carrots, chopped or sliced
- 2 stalks celery, chopped
- 2 potatoes, cubed
- 1 can chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 bay leaves
- Spices (thyme, cumin, smoked paprika, to taste)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and let it soften, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Mix in the carrots, celery, and potatoes. Stir and let them cook together for about 5-7 minutes.
- Add the chickpeas and pour in the vegetable broth. Bring to a gentle simmer.
- Stir in the diced tomatoes, bay leaves, and spices. Let the aroma fill your kitchen!
- Cover the pot and let it simmer for at least 30 minutes, or longer for deeper flavors.
- Taste and adjust seasoning with salt and pepper before serving. Remove bay leaves and serve hot.
