- 1 onion, chopped finely
- 2 garlic cloves, minced
- 1 can diced tomatoes
- 4 cups vegetable or chicken broth
- 1 cup jasmine rice
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Fresh basil, for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until onions turn translucent and garlic is fragrant.
- Pour in the canned diced tomatoes along with their juices and the broth. Bring to a gentle boil.
- Add in the rice, stirring well. Reduce heat to a simmer.
- Sprinkle in the Italian seasoning, salt, and pepper. Stir occasionally for about 20 minutes or until the rice is tender.
- Just before serving, stir in fresh basil for added freshness.
Notes
For thicker soup, let it simmer longer. It stores well in the fridge for up to four days and can be frozen, but omit rice before freezing.
