- 2 boneless, skinless chicken breasts
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 tablespoon Italian seasoning
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- 1 cup spinach (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Season and sear the chicken breasts in a skillet over medium heat with olive oil until golden brown, about 5 minutes per side. Slice into bite-sized pieces.
- In a baking dish, spread a thin layer of marinara sauce, then layer half of the chicken pieces, more marinara, mozzarella cheese, and half the breadcrumbs. Repeat layers.
- Top with marinara, remaining mozzarella, Parmesan cheese, and drizzle with olive oil.
- Bake in a preheated oven for 25-30 minutes until bubbly and golden.
- Let rest for a few minutes before serving.
Notes
For added flavor, use homemade marinara sauce and ensure the chicken is well-seared. You can freeze leftovers for up to three months.
