Description

A filling and delicious Italian-inspired casserole packed with chicken, marinara, and gooey cheeses.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon Italian seasoning
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 cup spinach (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season and sear the chicken breasts in a skillet over medium heat with olive oil until golden brown, about 5 minutes per side. Slice into bite-sized pieces.
  3. In a baking dish, spread a thin layer of marinara sauce, then layer half of the chicken pieces, more marinara, mozzarella cheese, and half the breadcrumbs. Repeat layers.
  4. Top with marinara, remaining mozzarella, Parmesan cheese, and drizzle with olive oil.
  5. Bake in a preheated oven for 25-30 minutes until bubbly and golden.
  6. Let rest for a few minutes before serving.

Notes

For added flavor, use homemade marinara sauce and ensure the chicken is well-seared. You can freeze leftovers for up to three months.
