Description

A comforting and satisfying casserole featuring tender chicken, gooey mozzarella, and tangy marinara, perfect for family dinners or meal prep.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon Italian seasoning
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 cup spinach (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken with Italian seasoning and sear in olive oil over medium heat until golden brown, about 5 minutes per side. Slice the chicken into bite-sized pieces.
  3. In a baking dish, spread a thin layer of marinara sauce. Add half of the chicken, then top with more marinara, mozzarella, and half of the breadcrumbs. Repeat the layers.
  4. Top with remaining marinara, mozzarella, and Parmesan. Drizzle olive oil on top.
  5. Bake for 25-30 minutes or until bubbling and golden brown.
  6. Let it rest for a few minutes before serving.

Notes

For added crunch, feel free to use panko breadcrumbs. This casserole can also be prepared ahead of time and stored in the refrigerator.
