- 4 boneless, skinless chicken breasts
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 tablespoon Italian seasoning
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- 1 cup spinach (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Season chicken with Italian seasoning and sear in olive oil over medium heat until golden brown, about 5 minutes per side. Slice the chicken into bite-sized pieces.
- In a baking dish, spread a thin layer of marinara sauce. Add half of the chicken, then top with more marinara, mozzarella, and half of the breadcrumbs. Repeat the layers.
- Top with remaining marinara, mozzarella, and Parmesan. Drizzle olive oil on top.
- Bake for 25-30 minutes or until bubbling and golden brown.
- Let it rest for a few minutes before serving.
Notes
For added crunch, feel free to use panko breadcrumbs. This casserole can also be prepared ahead of time and stored in the refrigerator.
