- 1 ½ cups all-purpose flour (or gluten-free blend)
- ½ cup rolled oats
- ½ cup brown sugar, packed
- ½ cup granulated sugar
- ½ tsp baking powder
- ¼ tsp salt
- ¾ cup unsalted butter, melted (or coconut oil for a vegan twist)
- 4 cups apples, peeled, cored, and thinly sliced (Granny Smith or Honeycrisp work well)
- 2 tbsp lemon juice
- ½ cup granulated sugar (adjust based on sweetness preference)
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp cornstarch (or arrowroot powder for gluten-free)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- In a medium bowl, combine the flour, rolled oats, sugars, baking powder, and salt. Pour in the melted butter and mix until crumbly.
- Press half of the crumb mixture firmly into the bottom of the prepared pan and bake for about 10-12 minutes until lightly golden.
- In a large bowl, toss sliced apples with lemon juice, sugar, cinnamon, nutmeg, and cornstarch.
- Once the base is out of the oven, spread the apple mixture on top and sprinkle with the remaining crumb mixture.
- Bake for an additional 25-30 minutes until the topping is golden brown and the apples are bubbly.
- Let the bars cool in the pan for at least 15 minutes before cutting into squares.
Notes
Serve warm with a scoop of vanilla ice cream or pair with tea. Can be made gluten-free and vegan.
