Description

A delightful, chewier version of classic cookies with a healthier twist using oats, bananas, and natural sweeteners.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1 ripe banana, mashed
  • 1/2 cup honey or maple syrup
  • 1/3 cup coconut oil, melted
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mash the banana and mix in honey (or maple syrup), melted coconut oil, and vanilla extract.
  3. In another bowl, stir together rolled oats, whole wheat flour, and baking powder.
  4. Pour the wet mixture into the dry ingredients and mix until well combined. Fold in chocolate chips if using.
  5. Scoop the dough using a tablespoon and place on a lined baking sheet.
  6. Bake for 12-15 minutes until golden brown around the edges.
  7. Allow to cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Don’t overmix the dough; adjust sweetness to taste. Using parchment paper prevents sticking.
