Healthy Mushroom Stuffed Chicken Breast

Description

A delightful dish where tender chicken is filled with a mouthwatering mixture of sautéed mushrooms, spinach, and creamy cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cremini or button mushrooms, chopped
  • 1 cup fresh spinach, chopped
  • 4 oz cream cheese
  • 2 cloves garlic, minced
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Fresh parsley or thyme, to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, add a splash of olive oil and sauté garlic, mushrooms, and spinach until tender.
  3. Remove from heat and stir in cream cheese and Parmesan until well combined.
  4. Cut a pocket into each chicken breast, being careful not to slice all the way through.
  5. Spoon the mushroom mixture into each chicken pocket, securing with toothpicks if necessary.
  6. In the skillet, heat more olive oil and sear the stuffed chicken breasts for 4 minutes on each side until golden.
  7. Transfer to the oven and bake for 20-25 minutes or until the chicken is cooked through.
  8. Let the chicken rest for a few minutes before slicing. Serve with a side salad or roasted veggies.

Notes

Don’t overstuff the chicken and allow it to rest before slicing for optimal juiciness.
