- 4 boneless, skinless chicken breasts
- 1 cup cremini or button mushrooms, chopped
- 1 cup fresh spinach, chopped
- 4 oz cream cheese
- 2 cloves garlic, minced
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- Fresh parsley or thyme, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, add a splash of olive oil and sauté garlic, mushrooms, and spinach until tender.
- Remove from heat and stir in cream cheese and Parmesan until well combined.
- Cut a pocket into each chicken breast, being careful not to slice all the way through.
- Spoon the mushroom mixture into each chicken pocket, securing with toothpicks if necessary.
- In the skillet, heat more olive oil and sear the stuffed chicken breasts for 4 minutes on each side until golden.
- Transfer to the oven and bake for 20-25 minutes or until the chicken is cooked through.
- Let the chicken rest for a few minutes before slicing. Serve with a side salad or roasted veggies.
Notes
Don’t overstuff the chicken and allow it to rest before slicing for optimal juiciness.
