A light and satisfying crustless quiche made with cottage cheese and spinach, perfect for brunch or a hearty breakfast.

- 1 cup cottage cheese
- 1 cup fresh spinach (or frozen, thawed and drained)
- 4 large eggs
- 1 cup cheddar cheese, shredded
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté the diced onion and minced garlic until softened.
- In a large bowl, mix together the cottage cheese, spinach, beaten eggs, and sautéed onion mixture. Stir in the cheddar cheese, salt, and pepper until well combined.
- Pour the mixture into a greased pie dish or baking pan and bake for 30-35 minutes, or until the center is set and lightly golden on top.
- Let cool for a few minutes before slicing. Serve warm and enjoy!
Notes
Store in the fridge for up to 4 days. Can be frozen in slices and reheated when needed.
